It's All About Fawad Alam's Pollo en Salsa Chipotle

I was at the horse races yesterday, the famous Melbourne Cup.  It was all good and fun, but a bit tiring.  I hate to say this, but I fell asleep before the 3rd Pakistan/South Africa ODI started.  Shame on me!  Keep in mind the time difference however!  The game started at 10:00 PM.  I did wake up early enough to catch the last ball when Shoaib Akhtar needed to hit a boundary.  The poor guy did his best.  He's just awesome no matter what!

Now, I know that yesterday I said I'd show you how to make a traditional nihari, but I'll do that later.  Today is all about Fawad Alam and his batting effort that brought Pakistan so very close to victory!  Now I've mentioned before that Fawad Alam is beautiful, just like the mexican artist Frida Kahlo.   Has anyone else noticed that Fawad Alam looks very much like the famous mexican mariachi singer Alejandro Fernandez?  Some days you almost expect Fawad Alam to burst into song while he's batting because the resemblance is so strong!

 


Is it Alejandro?  Or is it Fawad Alam?  Only the batting will tell.

So, in keeping with my Fawad Alam/Good Looking Famous Mexican People theme, I want to dedicate one of my best mexican dishes to Fawad Alam.  Good on ya, Fawad, keep up the great batting and Viva Pakistan!

Fawad Alam's Pollo en Salsa Chipotle 

 Pollo (pronounced PO-yo) is spanish for "chicken".  "Salsa chipotle" means "smoked jalapeno pepper (chipotle) sauce.  So this recipe is basically a traditional mexican salan.
Ingredients
1 chicken, skin removed and cut in 8 or 10
8 red tomatoes
5 cloves of garlic
3 tablespoons vinegar
1 tablespoon black pepper (powdered, not whole peppercorns) use more or less if desired.
1 can OR 6 fresh OR 6 dried CHIPOTLE PEPPERS
butter
salt

If you have dried chipotles, you must first soak them in hot water for a minimum of 4 hours.

1.  Cook the whole tomatoes in boiling water.
2.  Blend the cooked tomatoes, chipotles, vinegar, black pepper, garlic and salt in a blender until smooth.
3.  Melt some butter in a deep pan.
4.  Add the chicken, and brown it just a little bit.
5.  Add the tomato chipotle sauce, and cover it for a few minutes to make sure the chicken gets cooked through.
6.  Check the taste, and add more salt if necessary.
7.  Take off the lid, and simmer on low heat until the sauce reduces a bit.

You can eat this served on rice, or you can eat it with corn tortillas or some roti.
Enjoy the meal, enjoy the cricket, enjoy Fawad Alam's batting, and enjoy Alejandro Ferndandez' s singing!  Viva Pakistan!  Mexico Zindabad!
