Let's watch some cricket and eat some delicious Karahi Chicken!

What do YOU eat while watching Pakistan’s test matches?

Enjoy the test match experience even more with some excellent food.  Don’t know how to cook?  No problem, I’ll start off today with an excellent dish that is quite easy to make in order to build up your culinary skills. 

Always make sure that you’ve got a very sharp knife when you’re cooking.  The blade of a dull knife will slip and will cut you.  Sharp knives are much safer and you’ll get your work done much faster.  For chopping and slicing techniques, check these websites:

Today’s dish is Karahi chicken.   You’ll need a deep pan or a wok, a small frying pan, a sharp knife, and a cutting board.

Ingredients
1 chicken, cut in about 10 pieces, skin removed.
5 or 6 roma tomatoes, finely chopped
6 to 8 cloves of garlic, very finely chopped or crushed in a mortar and pestle
3 cm piece of ginger, more or less according to your taste, peeled and cut into very thin matchsticks OR chopped
Lal mirch (red chili powder), according to taste
Salt
Chopped green chilies,  according to taste
About a handful of chopped coriander leaves (cilantro for those of us from the Americas).
A bit of oil

Heat  a bit of oil in the deep pan or wok.  High heat.
Add the cut-up chicken, let it brown for a couple of minutes.
Meanwhile, in the smaller pan, heat up a bit of oil, and add the ginger matchsticks.  Fry until they get a little bit soft.
Add the ginger to the chicken.
Add the garlic to the chicken, let it fry for a minute or two, but DO NOT LET IT BURN!!!
Add the chopped tomatoes, lal mirch, salt and green chilies.
Cook until the tomatoes have reduced into a thick sauce.  This takes between 20-30 minutes.  If you want a drier type dish, reduce the tomatoes more.
Garnish with the chopped coriander leaves, and eat with chappatis or pita bread.

Enjoy the karahi chicken.  Some people like to add kasoori methi  (fenugreek leaves) and paneer, so feel free to do so.
